Colston Hall, Bristol

Colston Hall, Bristol

With Bristol Music Trust we worked hand in hand with the Executive Team; initially in conceiving a new catering strategy and subsequently with various phases of implementation.

The first priority was to re-tender the principal foodservice spaces which we undertook enthusiastically and secured a proactive local business, Bath Ales to mange new concepts: Colston St Bar & Kitchen (a large public facing , accessible café bar) and Gordito (an authentic Spanish tapas operation).

Analysis of the business had revealed a profitable in-house performance bars operation which we went on to improve and reinforce. This was delivered with the appointment of a new bars manager and an exercise to improve the aesthetics of the bars.

Liverpool Philharmonic Hall

Liverpool Philharmonic Hall

One of our major current projects is planning catering for the Royal Liverpool Philharmonic Society across their £12M re-development of the Liverpool Philharmonic Hall.

The Liverpool Philharmonic is located in the heart of one of Liverpool’s most celebrated streets, Hope Street, winner of the Great Street Award at the Urbanism Awards in 2013. Hope Street is something of a cultural icon and increasingly a tourist destination in its own right.

As part of the business planning and design team we are taking an active role in the re-development of this Liverpool performing arts’ institution.

Our brief covers management and design processes.

As part of the Design Team we are designing a series of bar spaces, foodservice areas and support facilities to maximise commercial opportunities for bars, foodservice and events.

In a parallel exercise we are currently investigating the management options and supporting a competitive tender exercise.

Scope

  • Catering strategy
  • Space planning
  • Detailed design

The Sage Gateshead

The Sage Gateshead

In the spring of 2012 the Sage Gateshead asked us to review their catering arrangements and performance. This is a significant contract in the events and performing arts’ sector in the region. Following a detailed research exercise on site and in Newcastle/Gateshead we studied the management options. This included appraisal of in-house versus contracting out models. A revived vision for services was developed which included the proposed addition of a new bar, a fresh approach to the brasserie and updates to their café. Having agreed the way forward with the Management Team we then lead a competitive tender process. We prepared systems to assess returns and take forward the most advantageous response. A caterer was selected as a result of their positive vision for the site. We supported the Team on contractual matters and on the refurbishment works that support the new contract.

  • Catering strategy
  • Operator tendering
